HOW IT WORKS

THE RULES OF THE GAME

THE 2 CATEGORIES

Among the traditional recipes, the most popular are very similar: the recipe of Le Beccherie restaurant in Treviso (Veneto region) and the one of Albergo Roma in Tolmezzo (Friuli Venezia Giulia region).

The ingredients are identical, and were the inspiration for the two categories.

ORIGINAL RECIPE

It originates from the tradition and includes 6 indispensable basic ingredients: savoiardi biscuits, mascarpone cheese, eggs, coffee, cocoa powder, sugar.
Variations are not permitted.

CREATIVE RECIPE

It represents innovation, and unleashes your fantasy.
It includes 4 indispensable basic ingredients: mascarpone cheese, eggs, coffee, cocoa powder.
It allows the replacement of savoiardi with other biscuits or sponge cake, and the addition of 3 ingredients at most, at the discretion of the competitor.

THE REQUIREMENTS

To join the Tiramisù World Cup you need to meet these two fundamental requirements

1. You have to be 18 years old, or older
2. You must not be a food-service professional

Food-service professional” means anybody who has worked, in the past 2 years and for at least 6 months even if non-consecutive, in a professional kitchen or in a bakery and pastry kitchen, in any capacity. Assistants (waiters, shop assistants, bartenders) are not to be considered as professionals.

THE INGREDIENTS

BASIC INGREDIENTS

Savoiardi Vicenzovo by Matilde Vicenzi, lyophilized Hausbrandt coffee, Lattebusche mascarpone, Le Naturelle pasteurized eggs (yolk and albums), Emilia Zaini cocoa powder and sugar are the basic ingredients.

• We will give them to you at the beginning of the competition: you won’t have to worry about anything
• Their amount is secret: you will find it out the day of the competition
• They can’t be replaced with other ingredients/products of a different brand or origin

EXCLUDED INGREDIENTS

Neither of the traditional recipes that inspired the competition’s rules contain alcohol: that’s why, if you want to win the Tiramisù World Cup, you mustn’t use it!

ADDITIONAL INGREDIENTS

Biscuits or sponge cake  that you will use to replace savoiardi are additional ingredients, along with the 3 ingredients that you will be allowed to use to prepare your Tiramisu with the Creative Recipe.

• They have to be brought by the competitor
• They have to be edible and not expired
• If they are packaged, the competitor will be allowed to bring them autonomously to their position
• If they are fresh, the competitor will have to buy them on the same day of the competition,  and bring them to the reception desk of the location in which he/she will compete within 30 minutes from the issue of the receipt. All the fresh ingredient must be delivered to the receptionist all together in a cooler bag.  The receptionists will check the receipt and label the ingredients with the competitor’s number before leaving them in the fridge. They will be brought to the competitors at their workspaces at the beginning of the competition, along with the basic ingredients.

Remember that, best case scenario, you will compete 3 times: at the selections, at the semi-finals and at the final.
Bring the ingredients for all the 3 challenges!

THE RULES OF THE COMPETITION

The Tiramisù World Cup is a competition with elimination stages: in every stage, the best competitor moves on to the next phase.

1. SELECTIONS

Who participates:
The regularly registered Competitors

During the Selections, the competitors will be divided into groups of 15 members at most who are competing in the same category (Original Recipe or Creative Recipe): every group will have a dedicated jury.

The Winner will be the Competitor who gets the highest score in his/her group.

2. SEMIFINALS

Who participates:
Winners of the Selections

In the Semi-finals we will see a competition in 4 groups: 2 for the Creative Recipe and 2 for the Original Recipe. As for the selections, each group will have a dedicated jury.

The Winner will be the Competitor who gets the highest score in his/her group.

3. THE FINAL

Who participates:
The 4 Winners of the Semifinals

The Final will be an unprecedented challenge: the 2 best Original Recipes and the 2 best Creative Recipes will compete for the title of World Champion in front a very special selected Jury.

The Winner will be the Competitor who gets the highest score, regardless of his/her category.

In the event of a tie, the Winner will be the Competitor who got the highest score in the evaluation criteria EQUILIBRIUM.

HOW THE COMPETITIONS WORKS

Remember that you will compete in outdoor locations!

  • If you compete in the Creative Recipe category and you have fresh ingredients, remember to buy them on the same day of the competition and to bring them to the Competitor’s Reception of the location where you will compete within 30 minutes from the issue of the receipt.
  • Show up at the location of the competition at least half an hour before the beginning of the challenge
  • Bring your kitchen tools (everything you need to prepare the Tiramisù, apart from the plate where you will assemble it) and the optional additional packaged ingredients
  • Find your workspace: the last two numbers on your competitor’s code are the number of the table where you will prepare your Tiramisù
  • At the beginning of the competition, the presenter will invite all the competitors to occupy their workspace: wait for that moment and then make your entrance
  • Prepare your workspace by showing all the kitchen tools and the optional additional ingredients, along with the basic ingredients and the fresh ones that we will give to you
  • A judge will check the integrity of the packages and the expiration date of all the ingredients that you will have on your table: be careful, ingredients that are not edible, expired or the package of which is not intact will entail disqualification
  • Wait for the presenter to announce the beginning of the competition: from that moment, you will have 40 minutes to prepare your dessert, tidy your workplace and display your dish
  • You are going to choose the final size of your dessert: the important thing is that the plate we’re going to give you (the surprise is the official Tiramisù World Cup 2017 plate, that is going to be yours after the competition) can contain it!
  • The voting will start at this point: the judges will reach the workplaces, will try all the Tiramisù dishes and will assign their scores
  • When the voting is over, the presenter will announce the best 3 Tiramisù and the Winner of the Competition will be declared

THE WORKSPACE

Every workspace will be marked by a number: yours will be the one with the last two numbers on your competitor’s code!

WHAT YOU WILL FIND

  • a table – or a part of a shared table – sized about 1 square meter and covered with a tablecloth
  • a roll of paper towel
  • 4 750ml bowls; plastic forks and spoons
  • a 220v socket
  • basic ingredients: savoiardi Vicenzovo by Matilde Vicenzi, mascarpone, eggs, prepared coffee, cocoa powder, sugar (you will find out the amounts at the beginning of the competition!)
  • one microwaven owen shared between all the competitors
  • the optional additional fresh ingredients (you will bring the packaged ones)
  • the Tiramisù World Cup official plate (that you will keep after the competition!) that you will need to assemble your masterpiece

  • you will also find a microwave

WHAT YOU NEED TO BRING

Your precious kitchen tools: everything that you use to prepare your Tiramisù, apart from the ingredients and the plate you will use to assemble it. Your tools must be washed in the dishwasher at most 24 hours before the challenge. They also must be sanitized the day of competition using a specific spray you will find at your table.

It won’t be just an amazing international Tiramisù Competition.

It will also be a perfect reason to discover Treviso, also called The Little Venice of the mainland, and its wonderful surroundings: the Sile River, the Venetian Villas, the Prosecco Hills, and more.

SELECTIONS

The day of the Selections is going to be a big party: 720 people will compete for the title of World Champion of Tiramisù in 6 wonderful meeting locations in the province of Treviso.

On October, the 30th we will send you a dedicated email with the location and the date when you will compete at the Selections.

Within November, the 3rd you need to pick up your kit and confirm your participation, following the instruction that you can find under “THE COMPETITOR’S KIT”
