ITALY – Original Tiramisu


(Serves 8 people)

  • 4 fresh medium eggs
  • 500 grams of mascarpone cheese;
  • 100 grams of sugar;
  • Savoiardi biscuits;
  • Coffee;
  • Cocoa powder to decorate



  • Start from the eggs: make sure that they are cool, then separate yolks from whites;
  • Whip the yolks until stiff peaks form with 50 grams of sugar, slowly add mascarpone until the mixture is smooth and frothy;
  • Whip egg whites until stiff peaks form with the remaining sugar, then slowly add them to the mascarpone cream;
  • To assemble the dessert, pour some cream in the bowl to create a base, then start with a layer of coffe-soaked savoiardi;
  • Stratify mascarpone cream and savoiardi;
  • To conclude, add a sprinkle of cocoa powder.
