Tiramisù “Princess Elena”
This recipe is by Stefano Serafini, Tiramisù World Champion 2021
INGREDIENTS
250g mascarpone cheese Lattebusche
3 egg yolks Amadori
3 tablespoons of white sugar Italia Zuccheri
Hausbrandt moka coffee to taste
Bitter cocoa to taste
Savoiardi Vicenzovo by Matilde Vicenzi to taste
1.000kg of Amore
DIRECTIONS
Start by lightly wetting the ladyfingers with
coffee using a
brush. Once you have finished this step,
cut them into the desired shape using the mould you have available. Now proceed to prepare the cream: start whipping the
egg yolks with the sugar and, once the egg yolks have reached the right creaminess, add the mascarpone cheese. Then, compose inside the
heart-shaped mould the first layer of ladyfingers and, once done, create the first layer of cream over which you will sprinkle the cocoa.
Make the second layer of ladyfingers and repeat the procedure with the cream, which you will level on the surface using a
spatula. Dust the same surface with a thin layer of unsweetened cocoa. Now it is time to remove the mould and…. to serve and invite for tasting with the same
