INGREDIENTS

45 grams egg yolk

55 grams sugar

250 grams mascarpone

10 grams mustard

Parma ham, as needed

Frizzy sugar, as needed

Coffee, as needed

Matilde Vicenzi ladyfingers, as needed

Cocoa powder, as needed

DIRECTIONS

In a bowl, whisk the egg yolks with the sugar for about 8 minutes. Gradually add the mascarpone until you achieve a thick cream. Add the mustard and whisk for another minute until fully incorporated into the cream. In a separate bowl, moisten the ladyfingers with coffee and set aside. Assemble your Tiramisù by layering twice: one layer of soaked ladyfingers followed by one layer of cream. Finish by dusting with cocoa powder and by adding dried Parma ham and frizzy sugar.
