This recipe was made by contestant Marika Menin on the occasion of the Tiramisù Day 2021


(for 4 cakes)  

2 Amadori egg yolks
250g of Lattebusche mascarpone cheese
3 tablespoons of fine sugar
Hausbrandt coffee (warm and lightly sweetened)
4 packets of cocoa Pavesini
Bitter cocoa powder
Icing sugar  


Line 4 muffin bowls with foil. Arrange all around, vertically and slightly overlapping, 9 Pavesini for each bowl, after soaking them quickly in warm coffee. The tenth Pavesino must be broken in half and placed on the bottom as a base. 
Fill the bowl with 2-3 spoons of cream previously prepared using the egg yolks, sugar and mascarpone. Then fold the Pavesini inwards to cover the cream and close and compact the dessert by using the other half of the Pavesino.
Wrap well with cling film and refrigerate for at least 1 hour. 
In the meantime, whip the egg whites with 1 tablespoon of sugar and add some to the remaining mascarpone cream.
Use this second cream as a base in the dish on which to plate the cake. 
Then create a liquid chocolate cream using bitter cocoa and a little natural water and pour it over the dessert.
Place strawberries as decoration as desired and sprinkle with icing sugar at the end.
The inside should look more or less like the picture!
