Recipe by Antonio Panzetta, Star of Tiramisù World Cup 2024

INGREDIENTS

250g of mascarpone
30g of egg yolk
20g of sugar 
2 sprigs of rosemary
1 lime
1 piece of ginger root
Unsweetened cocoa powder as needed
Coffee as needed
Ladyfingers as needed

DIRECTIONS

Finely chop all the rosemary and set it aside. Grate half of the ginger root together with the zest of half a lime.

In a bowl, combine the egg yolk with the sugar and start whisking. Add half of the mascarpone and continue to whip until well incorporated, then finish with the remaining mascarpone until you get a thick and smooth cream. Add the chopped rosemary, grated ginger, and lime zest to the cream.

You can now start plating. Alternate layers of ladyfingers soaked in cold coffee with layers of cream, finishing with a layer of cream on top. Dust with cocoa powder and a bit of lime zest, then serve.
