Doses for 6 muffins

70g of egg white Amadori
75g of sugar
80g of 00 flour
20g of starch
40ml of seed oil
1/2 sachet of yeast
Grated peel of 1 lemon

To decorate
Whipped cream


Sift the flour and baking powder together, add the starch, sugar and grated lemon peel.
Add the oil. Whip the egg whites until stiff and add them little by little to the previously mixed ingredients, with slow movements from the bottom to the top.
Fill muffin liners 3/4 full, add fruit or chocolate chips, jam or simply leave them as they are.
Bake for 20 minutes at 180°C, testing with a toothpick.
