Cold coffe made with Neapolitan moka
Savoiardi Matilde Vicenzi
125g of mascarpone cheese
100g of sugar
2 eggs
Cocoa powder to taste  


Start by mixing the egg yolks with the sugar until the mixture is smooth, frothy and golden. Then add the mascarpone cheese and delicately mix it all together with a spoon until the cream is homogeneous. Separately, whip the egg whites and add a pinch of salt. Once whipped, add the egg whites to the rest of the mixture, mixing from the bottom up. Once the mixture is homogeneous, place the ladyfingers on the serving plate and brush them with coffee to prevent the ladyfingers from getting too “soaked”.  Proceed with the plating (in my case, I chose the classic method), alternating layers of ladyfingers with layers of cream, making sure to alternate also the direction of the ladyfingers.
Sprinkle with cocoa powder and….Buon appetito!
